INDIAN COOKERY WORKSHOP
Demonstrated by Rajitha K. and Krisha on 28t January 2016

Twelve members of the International Women’s Club met at Machteld’s house for a Cookery Workshop.

Rajitha and Krisha demonstrated how to make several dishes including Vegetable Biryani, a delicious spicy sauce, small puffed flatbreads called Pulka and a super Cucumber Raita.

Everyone started preparing the vegetables at the dining table. Lots of onions were fried first and vegetables such as carrots, cauliflower, beans, potatoes and green chillies were  cooked with lots of different spices and tamarind from a tree in Rajitha’s father’s garden. A tasty paste was made by dry-roasting charred shallots, spices, peanuts and desiccated coconut, which Krisha then made into a paste using an electric blender.

Triangles of bread were fried golden-brown to top the biryani.  In a huge saucepan, Rajitha layered Turkish-style yoghurt with vegetables, chopped mint, chopped coriander and rice which had been boiled with an unusual type of cumin. Rajitha topped all this with the fried bread, then covered it all with aluminium foil and placed the whole pan in a wok of boiling water to prevent it burning.

We all sat down to eat all the delicious results, and everyone agreed that it was a really tasty meal and very enjoyable.

We would like to thank Rajitha and Krisha for all the work they put into the lunch, and all the members who helped to prepare the meal, and Machteld who let us use her kitchen, and finished the meal for us with tea and coffee.
